Jim’s Own Pork Kabobs with Apples, Soft Apricots and Red Onions

Kabobs are a fabulous way to marry meat with the wonderful flavors of veggies and fruit. Especially around summer and fall when there are so many wonderful options of fruit and veggies available.

Ingredients
Pork loin, cut into cubes
Red Onion, cubed
Crisp red apples, cored and cubed
Soft apricot, soaked in water for 15 minutes
Jim’s Own Rub Mild or Smokey
Wood skewers soaked in water for 30 minutes

Directions
We skewered the meat alternating with the fruit and onions resulting in this beautiful mix of colors and flavors.

In these I started with the onions, but next time I will put meat on both ends. As the meat cooks it clings to the skewer and prevents everything from sliding off as you turn it on the grill.

Heat the grill to medium high.

Dust the kabobs with your favorite Jim’s Own Rub Mild or Smokey.

Put them on the grill.

Cook the kabobs and make sure to turn them to ensure all the sides are cooked and internal temperature is 150F.
