Texas Pork Chops and Black Beans
4 Thick Cut Pork Chops
3 tsp. Jim’s Own Texas Steak Rub divided
2 15oz. cans black beans
1 clove garlic minced
1 medium avocado, peeled and cubed
1/2 cup feta cheese
1 plum tomato, seeded and chopped
1 small onion, diced
Rub pork chops with 2 tsp of the Texas Rub. Grill chops over medium heat until done, no pink in the middle.
Drain and rinse one can of beans. Combine drained and undrained beans, garlic and 1 tsp. Texas Rub in a medium saucepan. Heat through, stirring occasionally. Serve avocado, feta, tomato and onion on the side. Can be served over rice.
