SHEET PAN PORK LOIN WITH
ASPARAGUS AND SWEET POTATOES
1/2 Cup Jim’s Own Sauce Mild
1 lb. pork tenderloin
1 lb. thick-cut asparagus spears, tough ends snapped off
1 lb. sweet potatoes peeled and cut into 1in. thick wedges
2 Tb. Jim’s Own Smokey Rub
1 Tb. olive oil
Preheat oven to 425 degrees F.
Marinate pork loin in Jim’s Own Sauce Mild for 15 minutes. Brown pork loin in grill pan coated with cooking spray over med-high heat 4-5 minutes per side. (This step can be done in a large skillet or on your grill).
Spray a 13×18″ sheet pan with cooking spray. Arrange asparagus in the center on the pan. Coat sweet potatoes with olive oil and then toss with Jim’s Own Smokey Rub. Arrange sweet potatoes around the outside of the pan. Place pork on top of asparagus and pour leftover Jim’s Own Mild Sauce over the top. Bake at 425 for 25 minutes. Allow pork to rest for 5 minutes before slicing.
