Jim’s Own BBQ Chicken With
Southwestern Style Rice

Ingredients
2 to 3 lb. Chicken portions or deboned breasts
16 oz. Jim’s Own Sauce Mild, Hot or Smokey
2 cup uncooked rice
2 ½ cup water
1 onion, sliced and chopped
1 green pepper, sliced and chopped
1 tbsp sunflower oil
1 can black beans, drained and rinsed

Directions
Put the meat in a crock pot and pour half of the 16oz bottle of Jim’s Own Mild or Hot Bar-B-Que Sauce over the meat.

Cook on hot for 3-4 hours or on low for 5-6 hours.

The meat should be easy to flake and pull apart when cooked.

Debone the meat and discard the bones.

Pour the rest of the sauce over the meat.

Cook the rice and water as per instructions on rice pack.

Fry onions and peppers in pan with sunflower oil until soft in slightly browned.

Add fried onions, peppers and black beans to the cooked rice.

Serve BBQ chicken on the rice.
