Recipes Bacon and Apricot Stuffed Pork Loin
Jim’s Own Bacon and Apricot Stuffed Pork Loin
Servings: 6 – 8
1 Pork loin about 3-4lb
½ cup soft apricots chopped fine
2 tbsp. Jim’s Own Sauce Smokey
1 tsp. Jim’s Own Rub Smokey for the filling
½ pack thin sliced bacon
½ cup grated cheddar cheese
1 tbsp. Jim’s Own Rub Smokey for the outside of the pork loin
Directions
Step 1: Slice the pork loin lengthwise and roll the pork loin open.
Step 2: Mix the apricots, Jim’s Own Sauce Smokey and Jim’s Own Rub Smokey together.
Step 3: Put a layer of uncooked bacon on the pork.
Step 4: Top with the apricot filling and grated cheese.
Step 5: Roll the loin up and fasten with kitchen twine to secure.
Step 6: Rub additional Jim’s Own Rub Smokey on the outside of the roll.
Step 7: Put this on the grill and cook to internal temperature of 145 – 155 degrees F.
Step 8: Slice and serve with a drizzle of Jim’s Own Sauce Smokey.
