Fruity Chicken with Peppers
We love how beautifully the flavors of our Smokey sauce marry with the freshness of the pineapple. We used canned pineapple tidbits with the juice, and it was great. This meal cooked very quickly, about 10 to 15 minutes. Prep time was quick too, at about 10 minutes. We served this with brown long grain rice, as the nutty flavor of the rice paired well with the bright, sultry flavor of the Smokey chicken. The rice cooked about 35 – 40 minutes, so start that first. Dinner could be on the table in 40 minutes – yeah!
Makes: 4 – 6 servings
Ingredients:
4 to 5 boneless skinless chicken thighs or 3 breasts, cut into strips
1 tbsp vegetable oil
1 medium onion, cut chunky
6 cloves garlic, minced
1 green or red pepper, seeded and cut chunky
1 tin (20oz) pineapple tidbits (We will use the liquid and the fruit.)
2/3 cup Jim’s Own Sauce Smokey
2 tbsp. fresh chives, chopped (optional)
Brown rice for serving.
Directions:
Heat oil in Dutch oven or pot on the stove on medium heat and add onion. Sauté the onion until it starts to soften.
Add chicken thighs and cook on medium high for 5 minutes while stirring.
Add garlic and pepper to pot and cook for 2 to 3 minutes while stirring to prevent garlic from burning.
Drain the canned pineapple juice into a cup and mix with the Jim’s Own Sauce. Add sauce blend over chicken.
Add half of the can of pineapple tidbits to the pot.
Cook for 5 to 7 minutes until chicken is cooked and juices have thickened.
Add optional chopped chives to chicken and serve over brown rice. ENJOY!
