Beef French Dip Sandwiches
We made these delicious sandwiches using shredded beef from our beef pot roast – click here for the full recipe for the beef pot roast. We love how the sweetness of the caramelized onions complements the beef in these substantial subs.
Ingredients
1 tbsp vegetable oil or butter
2 white onions sliced thin
4 torpedo subs or hoagie rolls sliced
1 lb. shredded cooked beef
1 cup drippings from the beef or beef stock
Directions
Put the oil/butter and the sliced onions in a Dutch oven or a pan. The secret in caramelizing onions is to GIVE IT TIME! As soon as the onions start sizzling in the pot or pan turn the heat right down to a simmer and stir it every so often. Let it cook for about an hour.
Warm the beef in the microwave if it is not warm any more. Pile the warm beef on the rolls and top with the onions.
Take 1 cup of the drippings from the crockpot and strain in through a sieve to take out the floating bits. You will be left with a delicious stock (au jus) that you pour into individual serving bowls or ramekins. Serve this on the side of the sandwiches for dipping.
