Chalupa Chicken Dinner Bowl
The word chalupa means a fried corn tortilla that is sometimes shaped like a boat and usually filled with a savory mixture including meat, vegetables or cheese. Well, we decided to make a baked flour tortilla boat by using an inverted shape like a small cake pan and shaping a slightly moistened flour tortilla over it. We baked it at 350 F for 13 – 15minutes or until crisp and slightly browned. This makes a wonderful edible bowl for any number of fillings.
For our filling we used salad leaves, cooked rice, black beans and shredded chicken Jim’s Own Style made in the crockpot. We love the way the Jim’s Own Hot or Mild cut the acidity of the tomato in the sauce for the chicken.
Here is the recipe to prepare the chicken in your crockpot.
Yield: Makes 8 servings
Ingredients
2 lb. boneless skinless chicken breast
2 tbsp. Jim’s Own Mild Rub
1 (4-ounce) cans chopped green chiles (optional)
2 garlic cloves, chopped
1 (14-ounce) can tomato sauce
5 oz. Jim’s Own Sauce Hot or Mild
8 taco/tortilla salad shells
4 cups mixed lettuce leaves, shredded
4 cups cooked rice
2 (14oz cans) black beans, rinsed
Toppings: shredded Monterey Jack cheese, pickled jalapeño slices, halved grape tomatoes, sour cream, chopped avocado
Directions
Place chicken in a slow cooker/crock pot and add Jim’s Own Rub, garlic, tomato sauce and Jim’s Own Hot or Mild.
Cover and cook on HIGH 3-4 hours or on LOW for 5-6 hours and check with thermometer.
The chicken should be cooked to 170F.
Pull chicken into large pieces with two forks.
Cook, uncovered, on HIGH for 30 minutes to 1 hour or until liquid is slightly thickened.
Place shredded lettuce evenly into shells.
Top with rice and beans and spoon about 1 cup chicken mixture into each shell with a little extra sauce for flavor.
Serve with desired toppings.
