Beef Tacos with Sweet & Sour Slaw
We made these beef tacos using shredded beef from our beef pot roast – click here for the full recipe for the beef pot roast. We used our Jim’s Own Mustard as the secret ingredient in the dressing for the slaw. It was fabulous!
Ingredients
2/3 cup cider vinegar or rice vinegar
4 tbsp Jim’s Own Sauce Mustard
4 tbsp sugar
1 pack coleslaw mix (We like the one that has the purple cabbage and carrots included.)
8 small soft tortillas
2 to 3 cups of shredded cooked beef
Fresh cilantro for garnish
Directions
Mix the cider vinegar, Jim’s Own Mustard and sugar until sugar is dissolved. Pour over the coleslaw and leave for 15 minutes or so to allow the dressing to flavor the slaw.
Warm the tortillas in a dry pan if you want them a little browned and crisp or just for a few seconds in the microwave if you want them softer.
Warm the beef in the microwave if it is not warm anymore. Pile the warm beef on the tortillas and top with slaw and a little of the dressing. Garnish with fresh cilantro and enjoy!
