Recipes Peachy BBQ Chicken
Super Simple Peachy Barbecue Chicken
This is a crockpot recipe for those busy days or when you don’t want to heat up the whole house in the summer. It is so easy to make – only 3 ingredients.
Makes: 4 servings
Ingredients
2 1/2 pounds chicken drumsticks, skin on or off
1 cup Jim’s Own Sauce Mustard
1/3 cup apricot or peach preserves
For serving:
½ cup Jim’s Own Sauce Mustard
¼ cup apricot or peach preserves
Fresh peaches, cut into wedges (optional)
Directions
Place chicken in a 3 1/2- or 4-quart slow cooker.
Stir together Jim’s Own Sauce Mustard and preserves in a bowl.
Pour over chicken, then cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours.
Chicken can overcook in the crockpot, so we set a timer plug on ours. It then cooks the desired time just before we get home and wont’ sit in the hot pot longer than needed. (I know there is fancy digital crockpot that you can set time, temperature etc., but we have an old manual one that works great.)
Transfer chicken to a serving dish, cover and keep warm.
In a microwave safe container mix the additional Jim’s Own Sauce Mustard and preserves for serving. Heat in the microwave and pour over the chicken and fresh peaches.
