Jim’s Own Oven Baked Veggies
This is a delicious side for any roast meat. It can also be served as a vegetarian meal with cooked quinoa, basmati rice or bulgur wheat.
Servings: 4 to 6
Ingredients
1 Butternut squash, peeled & cubed
1 cup sweet potato, cubed
1 cup baby carrots
2 onions, peeled & cut into quarters
3 zucchinis, cut in chunky pieces
1 green pepper, seeded & cut chunky
1 tbsp. olive oil
Salt and black pepper to taste
½ cup Jim’s Own Mild, Hot or Mustard Bar-B-Que Sauce
Directions
Heat oven to 350 °F.
Put veggies in ovenproof dish.
Pour olive oil over and stir to coat.
Bake in oven for 30 minutes.
Pour over Jim’s Own Mild, Hot or Mustard Bar-B-Que Sauce and put back in oven for 15-20 minutes.
Season with salt and pepper and serve with your favorite roast or grilled meat.
