Texas Caviar

This crunchy, tangy and sweet dish is delicious served with corn chips or as a side with your grilled meat. It should be prepared the day before for the dressing to have time to infuse the caviar and you will have more time to socialize with your guests and not rush around with last minute preparations!

Serves 8

1 15oz can black eyed peas, drained
1 15oz can pinto beans, drained
1 15oz can yellow or white shoe peg corn, drained
1 small jar pimentos, drained
1 small onion, chopped
1 cup celery, chopped

Dressing
1 tsp salt
½ tsp ground black pepper
1 tbsp water
¾ cup cider vinegar
¾ cup sugar
¼ cup vegetable oil (leave this out for low fat version)

Directions
Combine dressing ingredients in saucepan and bring to the boil.

Remove from heat and cool completely. Drain all caviar ingredients and mix together.

Pour dressing over caviar and marinate overnight.

Drain and serve.
