Hot Potato Salad

With some colder weather on its way we are looking for comfort food that will keep us warm from the inside too. This is tangy and sweet side that will please the whole family.

Make 4-6 servings

4 medium red or gold potatoes
1 large onion, chopped coarsely
2 tsp garlic, minced
1 tbsp vegetable oil
Salt & black pepper to taste
½ cup Jim’s Own Sauce Mustard

½ pack of Bacon (optional)

2 tbsp chopped spring onions (optional)

Directions
Cook the whole potatoes in a pot of water until cooked, but still firm enough to cut into cubes.

Once cooked take the skins off and cut into cubes.

Sauté the onions in a pan for 5 min and add the minced garlic and cook until browned and deliciously sweet.

Pour over Jim’s Own Sauce Mustard and mix. Add this sauce over the potatoes while it is still hot.

Season with salt and pepper and serve with your favorite roast or grilled meat.

If you are adding the bacon, you can cook the bacon strips and cut into smaller pieces and stir it into the potatoes.
