Hearty Turkey Stew

This is a wonderful way to work away all the leftover turkey from Thanksgiving. The bonus is this is low fat and as an option you can add beans to it to make a wonderful high fiber meal that could be served in tacos or burritos with all the trimmings.

2 ½ pounds or more Turkey breast
1 (28-ounce) can crushed tomatoes
1 (16-ounce) can creamed corn
1 package frozen mixed vegetables
1 cup Jim’s Own Sauce Mild, Hot or Smokey
1 onion, chopped
1 tablespoon Worcestershire sauce
Salt and pepper
Celery salt
1 can black beans drained

Shred leftover turkey. Place the shredded leftover turkey in a large pot and add the remaining ingredients. Simmer slowly for 45 minutes, stirring often to prevent sticking. Serve stew over rice or pasta noodles.

Serving suggestions: Serve on cooked rice or noodles, tacos, burritos, nachos, whole wheat rolls or in pita pockets.
