Spiced Chicken Burgers with Guacamole

Skinless and boneless chicken fillets are the base for these delicious burgers. We split the fillets 2/3 way down the middle and fold it open before we season with Jim’s Own Rub and grill these beauties or if you have big chicken fillets split them all the way through. Our Jim’s Own Rub packs a punch flavor wise with earthy paprika and fragrant garlic. We topped it with guacamole, sundried tomatoes and feta cheese – loved combination!

For 4 servings

4 chicken breast fillets, skinless & deboned
2 tbsp. Jim’s Own Rub Mild
1 tsp vegetable oil (if cooking in pan)
4 hamburger buns
4 tbsp. guacamole
8 sundried tomatoes
4 tbsp. cubed or crumbled feta cheese

Cut the chicken fillets ¾ way through if they are smaller or cut them all the way through if they are bigger. Spice generously with the Jim’s Own Rub and allow marinating 30min – 2 hrs.

Stovetop directions
Add oil to the pan and heat to medium-high heat. Add seasoned chicken breast fillets to pan and sear on both sides. Turn the heat down to medium-low and cook until chicken fillets are cooked through.

Grilling directions
Heat grill to high and add fillets to grill. Seal the fillets to keep in the juices then turn the heat lower and grill until the chicken is cooked.

Serving suggestions
Put chicken fillet on hamburger bun, top with guacamole, sundried tomatoes and feta cheese. Enjoy!
