Chicken Pasta

We used our seasoned pan seared chicken fillets in this delicious, family friendly pasta. To dress the pasta, we used fat free Greek yogurt mixed with basil pesto which gave the pasta a delicious, slightly tangy and creamy taste. The perfect base to balance the flavor packed chicken!

Ingredients
Pasta, we used angel hair pasta.
2 to 3 chicken breast fillets, skinless and deboned
1 2 tbsp Jim’s Own Rub Mild
1 tbsp vegetable oil
2 tbsp Greek non-fat yogurt
2 tbsp basil pesto
1 green pepper, sliced
1 small pack plum tomatoes

Directions
Cut the chicken breast lengthwise, which will cut down significantly on the cooking time.

Sprinkle the Jim’s Own Rub generously on each of the fillets and, if you have time, let it marinate for an hour or so in the fridge.

Cook the pasta according to the instruction on the packet.

Warm the oil in the skillet or pan to medium high heat and add the chicken fillets to the pan.

Sear fillets to seal in juices and then turn the heat down to medium/low to allow the inside to cook to perfection. Remove from pan.

Add sliced pepper and tomatoes to pan and cook until just softened.

Blend Greek yogurt and pesto and add to drained cooked pasta.

Top with sliced chicken, tomatoes and pepper and serve.
