Crockpot Beef Pot Roast

We decided to make a beef pot roast in the crockpot and share some wonderful meals you can make with the cooked beef. We started with 4 ingredients – beef top roast (around 3 lb), Jim’s Own Rub Mild, beef stock and 2 medium onions sliced into thick rings. That’s it! The secret for us to juicy beef is that you shred the meat after 7 1/2 hours of cooking in the crock pot and cook it in the juice another 30 minutes. The meat then absorbs the cooking liquids leaving you with tender flavorful beef.

Ingredients
2 white onions sliced thick
3 lb. Beef pot roast (could be bottom, round, top or chuck roast)
3 tbsp. Jim’s Own Rub Mild
1 cup beef stock

Directions
Put the thick sliced onions at the bottom of the crockpot. Put the beef on top of the onions. Sprinkle Jim’s Own Rub over the beef and add beef stock to the pot. Cook on high for 6-7 hours or 9-10 hours on low until beef is easy to pull apart.

Pull the beef apart and cook in the juices for another 30 min on high. Serve with your favorite sides, in tacos, on rice, on subs or sandwiches.
